As someone with celiac disease, I often find myself daydreaming about foods I can no longer have. After my diagnosis, eating gluten-free became my life, just as it did for so many others with celiac disease or gluten intolerance. With the rise of recognizing dietary restrictions and specialized foods, I decided to put my daydreaming to use!
